Drop Cookie Recipe 1: Creamy Lemon Macadamia


Since Christmas is fast approaching and I am still "quarantined" at home because of my terrible ankle sprain, I thought of sharing with you some recipes which would probably be one of the main topics that I will be posting in my blog from time to time.

I hope that this will help teens, moms and every person who are also interested in baking to do these super easy recipes. You can bake these just for personal munching or you can share or give it to your loved ones as gifts. Who knows, someday, it will be your line of business. Here goes:

Ingredients:

2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1 cup light brown sugar, packed
1/2 cup white sugar
1/2 cup salted butter, softened
4 oz. cream cheese, softened
1 large egg
2 tsp pure lemon extract
1 1/2 cups (7 0z) whole macadamia nuts

Yield: 2 1/2 Dozen

Preheat oven to 300 degrees Fahrenheit.

In a medium bowl combine flour, soda and salt. Mix well with wire whisk and set aside.
In a large bowl blend sugars well with an electric mixer set at medium speed. Add the butter and cream cheese, and mix to form a smooth paste. Add the egg and lemon extract, and beat at medium speed until fluffy combined. Scrape down sides of bowl occasionally.
Add the flour mixture and macadamia nuts. Blend at low speed just until combined. Do not overmix.
Drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart. Bake 18-20 minutes. Immediately transfer cookies with a spatula to a cool flat surface.
